Place your pre-order today for Ostrich fern fiddleheads! Ostrich ferns (Matteuccia struthiopteris) typically emerge in Northern Michigan in early May and their fiddleheads (the coiled-up fern) are available through mid-May. Fiddleheads are a wonderful early spring vegetable with a mild taste. I prefer them to asparagus which can be tougher and stringy. Fiddleheads should be cooked in boiling water for about five minutes before sauteeing to add to pasta, eggs, or just salted and eaten as a side dish. The fiddlehead and the entire stalk is edible once cooked. Fiddleheads may have a papery covering which can be brushed off before cooking.
Ostrich fern fiddleheads are harvested sustainably from private land. A quart-size bag holds approximately 1/4 lb of fiddleheads.
